Thanks, that seems to have fixed the issue. I thought I had the newest chipset because I checked in Armory Crate and it did not show a new version. That is what I get for trusting the mobo vendor.
If I don't enable those features I get no settings. If I use Ryzen Master to turn off the 2nd CCD the stuttering goes away. The games behave otherwise with both CCDs enabled.

Per reddit there are some shenanigans a foot for many SSDs. In this test series the SN850X is the only one to more or less pass. I look forward to seeing if this is debunked or further explored. I am leaning toward the SN850X based on that.

Well my concerns are essentially alleviated. The product page for their AORUS Gen5 10000 SSD specifies the heat sink is in fact optional so you can use the motherboard solution and it specifies form factor of M.2 2280.
