Would the 3GB of VRAM on the 780ti be enough for 5760x1080?

I am planning on building a PC with one 780ti (and possibly a second down the road) and I would like to run it in a triple monitor setup. I plan on running the system in a Micro ATX case, so the lower temps of the 780ti would work better for me than the 290x. My only concern would be the VRAM on the 780ti.

You should be good to go. [H] did a review on 4k gaming (about 8.3 million pixels vs 6.2ish for your 5760*1080) and they said they did not find a scenario where the GTX 780 Ti was hindered by its 3gb of VRAM.

I used 480SLI which has 1.5GB for almost 3 years in 3d surround and never had an issue at that rez. 3GB is more than fine particularly if you aren't running 3D.
