Some advice on building a home server please

Howdy all,
I've been doing some research on building a home server, and frankly it's a lot to consider. I'm curious to find out what you ladies and gentlemen are using at your homes. I'll try to break this down as simply as possible.

OS: Linux Flavor (would prefer GUI as I'm only about a year into Linux and not quite comfortable with CLI only)

What I want the machine to be capable of:
-Streaming and downloading of Movies, Music, and basic office files (Security is a concern)
-Ability to rip my dvd/cd collection on to the hard drives
- Remote Access
-Any other ideas?

What hardware I have to make it happen already:
-Switching my i5 2500k from the main gaming machine to the server and putting the 2600k linux folder into my main rig
- Asus P8z68-v Pro
- 4 x 2gb Kingston1600
- 2x seagate 7200 rpm 1 TB hhd
- 1x WD 7200rpm 500gb hdd
- Corsair 650w 80+ PSU
- NZXT 210 Source Case
- Asus Dvd player

Additional thoughts:
- Security is a must
- Wireless ability (the card I have is mint/ubuntu friendly)
- Video Card?
- Relative low maintenance
- Have the good idea fairy slap me in the face with something great
- Should I sell the i5 2500k and get something like an i3 2120?
