Redoing my NAS, what Raid should I pick?

Long story short, my QNAP TS-809 was RMA'd and back, but to get it working correctly I need to update to the latest firmware which will reinitialize the drives.

Here are my questions:
I have 5 2TB drives in a Raid 5 Array and writes over the network are slow.

Would I be better off switching to RAID 10, even though I can only use 4 of my 5 drives? How would performance be compared to 5 drives in RAID 5. And if I did that, can I stick in 4 more drives at a later time to have an 8 drive RAID 10 array, or am I going to have to re-do from scratch?

While I'm asking, assuming I were to max the bays out at 8 2TB drives, what's the best overall configuration to use? I use it for streaming storage, mostly reads, but back up to it frequently over the network.
