Optimal Video Codec for HDTV viewing

I am in the process of re-encoding some movies I have on my hard drive. I stream them through my PS3 to my Samsung 720p 50" plasma in the living room.

But I am running into some problems. Trying to find a codec that provides superb video quality without losing my sound to 2.0 stereo. I am currently using AutoMKV for a lot of my reauthoring. My PS3 can play .mp4 files which allows you to re-encode the file to allow DTS, DD, and more for your sound to play correctly through Tversity. You cannot stream a h.264 or x.264 file to a PS3.

But I am working on a way around Tversity, but am just trying to find a suitable video codec that provides excellent video details. I don't want it obvious that it was a crappy codec for my encoding process.

Any ideas on the best codec to use for encoding?
 
That involves transferring it to the PS3. Which will take a long time.

I am looking into streaming a file to the PS3.
