File Encryption Software?

It's not free, but Jeteco BestCrypt is a very good piece of software. It let's you create "containers", which are files of arbitrary size that you can then mount with the BestCrypt software as a harddrive - and they're heavily encrypted.

For full disk and/or container encryption on Win2K/XP your best bet is TrueCrypt.

For file encryption use the aforementioned gnupg with a suitable front-end
