Is it possible to run an Exchange server in a completely isolated environment?
 
I want to say yes because using the server name works when sending emails within the intranet (johndoe@server_name.domain_name.local for example), but Exchange requires a FQDN to run. I've never tried it but you might be able to use server_name.domain_name.local as the FQDN.
 
Do you mean isolated, as in off of a domain? If so, you probably could, but you wouldn't be able to really use it that much.
