Which is the better performing card of these two assuming both have 256MB of memory?

It's going to be pretty much neck and neck, but I would go with the 7900GT because:

A. It's a cooler running card.
B. It's got LOADS of overclocking potential compared to the 7800GTX.

7800GTX feature higher vertex domain clocks than the 7900GT do. The 7800GTX vertex domain clocks are 40 mhz than the base ROPS/Pixel Shader core. The 7900GT vertex domain clocks are 20 Mhz. Overall I'd have to say 7900GT though. After owning a 7800GTX SLI setup and 7900GT MSI 7900GT SLI setup with 500/1530 base clocks. The 7900GT just runs cooler and dumps less heat into the room. Even at the base 450/1530 you'll have the same vertex throughput and higher pixel through bandwith and greater bandwith and just a generally cooler running card.
