I have 2 sticks in dual channel:

G.SKILL 4GB (2 x 2GB) 240-Pin DDR2 SDRAM DDR2 1066 (PC2 8500) Dual ChannelKit Desktop Memory Model F2-8500CL5D-4GBPK.

Would I notice a huge difference if I picked up another set of these and run 4x2gb? The 2x4gb set is pretty expensive.

I highly doubt you will see a difference in performance. Depending on the rest of your system, you might get a lower overclock, that's about it.

Sorry forgot my specs:

AMD Phenom II X4 940 Black
Scythe MUGEN-2/Antec 120mm Tri-Cool
Gigabyte GA-MA790X-UD4P
G.Skill 4GB PC2 8500
MSI R7850 Twin Frozr 2GD5/OC
Crucial m4 64GB SATA SSD (Boot)
Western Digital Caviar Black 640GB SATA
Antec Sonata III 500 Black w/earthwatts 500W PSU
Win7 64bit

(I know...it's time for a new build :D )

I don't oc at all. Also I could never get this memory to run stable at 1066 with my mobo but it has been rock solid at 800 for 3/4 years.

Just go with 4x2gb. If you were on DDR3, the situation would be different, but there's no point in investing in 4gb DDR2 sticks.
