I currently have two 36 gig raptors in raid 0. I have another one sitting on the shelf just begging to be used. My question is two fold.

First, can 3 raptors be used in raid 0? I know 2 and 4 can be used, but can 3?

Second, can I use different speed drive (looking at the Hitachi 160GB 7200RPM SATA Hard Drive) for the raid 1 portion of a raid 0-1 setup?

I this do-able?
 
First. RAID0 can be run with any amount of drives over one.
Second. Its workable, but your raid card may not like it, giving you errors in windows every once in a while... or crashing your system... better to have all identical drives. With a raid array.. heres a simple rule of thumb. It will go as fast as your slowest drives and be as large as your smallest drive. (when it has to go with RAID0, and 1, and 0+1.... and 2, and 3.. and 4.. and 5... so all of them)
 
Errors aside, if you've a good controller, you shouldn't have a problem with drives of different speeds. However, the performance of your array is going to suffer... :(
