Yes you should buy insurance. It is worth it in case the card is damaged in shipping or is lost. FedEx and UPS will only cover a maximum of $100 without insurance. So if you want to gamble that is up to you, but I would recommend it.
You just completely wasted about 250-300 dollars to SLI on a 1280x1024 setup. One GTS would have done that setup just fine. You don't need all of that horsepower at such a lower resolution.
From what I read they have fixed the black screen issue (Evga anyways). If you get a card that has a black screen issue you have to send it in for an RMA and they will send you a new one without the issue.

I had this problem with an old gigabyte board (not LGA 775) with Windows XP. All I did was go into the standby management in windows and disable it from turning off the hard drives in sleep mode. It fixed it from what I can remember.
