Considering setting up 2008r2 remote desktop server to replace our 2003 terminal server. Already have the server and OS which is why I'm not looking at a newer Microsoft OS. Wondering what other options are out there. Perhaps something better with less hassle. Meh, call me lazy.

Chiming in to call you lazy! :p

But seriously though, if you already have the server and OS, the only (relatively) simpler option would be a VM Terminal Server.

What is the purpose of the Terminal server? i.e. What apps are you providing access to?

File server with word and excel hosting government compliance information for all of our remote offices. Almost done with it already. Still tweaking permissions on directories.

RDP Server works really well.

We ditched it however for unique windows 7 instances running on esxi. Needed better application compatibility and server 2008 didn't want to play nice with some of our crappy ancient applications.

I have a win2k3 TS for the shop floor which works great. However, I do miss server 2000....it just ran and made no noise:)
