Help with new build

I'd like to get started on a long overdue upgrade of the main rig in my sig below. I haven't done a complete overhaul in a few years so bear with me as I'm a bit out of the loop.

The parts that I need to upgrade:

CPU
Motherboard
Memory
PSU

The parts that I plan to keep:

Case: Apevia XSniper2 (ATX)
SSD: Samsung 860 EVO (SATA)
HDD: WD (SATA)
Monitors: Two Acer 27" and one 24" (1920 x 1080)

Use: Web browsing, Music playback, Word Processing/Visio Design, SSH and RDP access to VMs in my ESXI server, a bit of scripting/programming, Games including Roms and Emulators (MAME, NES, SNES, GENESIS, N64, PS1, PS2, Gamecube) and PC Games, mostly Steam such as Mega Man series, Crimson Clover, Streets Of Rage 4, Mighty Gunvolt, Crisis Wing, Puyo Puyo series, Tetris series, Pac-Man series, Raiden series, Bullet Soul (Mostly shmups, maze, puzzle and action adventure/platform, nothing too heavy)

OS: I already have Windows 10 Professional

I'd like to stick with AMD and was thinking along the lines of Ryzen 3 and Ryzen 5, whichever gives the best in terms of price to performance. I'll have to go with discreet graphics. Any help is greatly appreciated.

What size case are you keeping? SATA SSD or NVMe SSD? What rez are the monitors?

FYI. Ryzen doesn't have an iGPU unless you buy an APU. You'll need a discrete video card and that's what I'd recommend over an APU.
 
1) It's an ATX case:

2) It's a SATA SSD. A Samsung 860 EVO to be exact.

3) The resolution of all three monitors is 1920 x 1080.

4) On your last note, I did some more research last night and saw that the Ryzen 3rd gen CPUs that I want don't have an APU. What discrete GPU would you recommend? I'm not doing any heavy gaming or photo/video editing and the games that I've listed run with no issues on my current setup.

It has enough ports for all of my monitors and also room to add more.
 

Thanks. That's not far off from what I had edited above in my first post. If others don't have anything different, I'll proceed ahead but just to clarify, is that much processor really needed for what I'm using it for?

Maybe not. However, it should have lots of staying power over time. If you want to save a few bucks then you could go with a 3600X
