my guess is with the market moving towards streaming style gaming, handheld makes sense for Microsoft as they behind Nintendo and Sony in hardware sales. Also with MS investing alot in AI will give them access to alot bare metal hardware that could be used for dedicated streaming sessions.
you could go the new ultra gateway plus a standard AP for similar cost. but the dream router should work great as well. bonus you would have remote access.

Should be okay if both cards have decent Linux drivers. If I had an extra slot I would test for you. Currently passing a P400 to an LX container vs a full VM without issues for plex encoding.

Unifi just came out with the Cloud Gateway Ultra with 2.5GB WAN connection for 129$. Throw in a UG+ Access point and you got something that just works :) and is much cheaper than that junk

Plenty of things could replace this ancient box. Anything with 2 Intel GB ethernet would be fine. Something like the cheap mini PCs on amazon for 100-150$ :)

Look on ebay for this chipset: Intel X540-AT2 should be 30-35$ for a dual port card. 10gbe/1gbe/10mbs card. no 2.5 or 5 speeds but sounds like it does not matter for you. Make sure to grab the right height bracket.
